Been watching this week...
and have noticed that sometimes under the 1st dam it will say "unraced"
and sometimes, there's no info except "dam of one registered foal, above"
Does this latter mean that she was only ever intended for breeding, or simply an omission?

It's not an omission. She could have always been intended for breeding, or she could have been injured as a youngster or in training that in some way prohibited her from racing. Personally, I'd rather see unraced than a lot of races and few wins (if any)
And as a rule..I prefer to get the 1st or 2nd foal.

I think that sometimes when you do not see the word "unraced" yet there is no race record shown that it is an ommission. As has been mentioned it looks better on a catalogue to see unraced than "sucked"
So if the mare "sucked" owners would rather it say nothing at all on the catalogue page.

If you are looking to buy, the best thing to do is ask why the mare was unraced...or not. You'll get a bunch of stories, but at least it will be amusing...

Don't forget that catalogs are put out by sales companies, which are trying to sell horses. It's not necessarily in their best interest to highlight the bad and the ugly but to slant everything in the best light possible. So if they are silent on something, chances are good that there wasn't much positive to say.
Of course there is only so much you can do when the best light possible still puts the 4th dam on the page a full inch from the bottom.

Unless it's an outstanding individual (in my eyes, of course) I don't buy anything with a 4th dam on the page.
